So you wake up craving pancakes, but you are out of eggs and milk and you do not want to make a trip to the grocery store. No worries. You can make pancakes out of these simple ingredients:
1 cup flour
2 TBS sugar
1 TBS baking powder
1/2 tsp salt
1 TBS oil or melted butter
1 cup water
Optional: add vanilla, cinnamon, fresh cut up fruit, chocolate chips whatever you like!
Mix the flour, sugar, baking soda and salt. I use a whisk to really get the ingredients combined. Add any other additional dry seasonings at this time. Stir in the water and oil. If you want thinner pancakes or waffles add a little more water. If you are using wheat flour or a combination of other flours, you may need to adjust the water amount. Next add the vanilla or other liquid flavorings at this time. Mix well. Finally, fold any optional fruit or other.
Heat your pan. On my electric induction range I set it for 360. Add a little butter or oil to the pan so the batter will not stick. Pour in the pancake batter. This batch should make four nice sized pancakes. I wait until the batter on top has a good amount of bubbles on top and is no longer runny. This makes the pancake easier to flip. When both sides are golden and the middle is cooked through you pancake is ready!
If you are out of maple syrup you can use the following alternatives like honey, jam, nut butters, melted chocolate or whatever other sweet thing you have on hand. These are so good you can also eat them plain!
